EATS: Delicious and Easy Enchilada Casserole

Casseroles are an easy and yummy way to meal prep and to save money! Brown bag this scrumptious meal to work and enjoy a hearty, inexpensive meal instead of going out and spending money. This delicious and easy enchilada casserole recipe is one that my family used to enjoy when I was growing up and it has stood the test of time! We all still make it and eat it. Enjoy two prep way: a full version and a 1/2 now, 1/2 later version. I picked up all the ingredients at my local Kroger for only $7.10, or about $0.89 a serving!

EATS: Delicious and Easy Enchilada Casserole

What You’ll Need:

1 Pound of Ground Beef
1 Chopped Onion or 1 Cup Diced Frozen Onions
1 Can Cream of Mushroom Soup
1 Can of Cream of Chicken Soup
1 Small Can Enchilada Sauce, Medium
1 Bag of Grated Mexican Cheese
12 White Corn Tortillas
Casserole Dish
Skillet
Spatula

How to Prepare Full Casserole:

  1. Preheat oven to 350.
  2. Dice onion.
  3. In a large skillet, brown ground beef with diced onions over medium heat. When fully cooked, turn off heat.
  4. Drain mixture to remove excess grease.
  5. In large skillet, add soups and sauce to meat. Mix well.
  6. Tear 12 tortillas into bite sized pieces.
  7. Layer casserole dish: tortilla pieces, meat mix, cheese. Repeat.
  8. Bake for 30 minutes.

How to Prepare Half Casserole:

  1. Preheat oven to 350.
  2. Dice onion.
  3. In a large skillet, brown ground beef with diced onions over medium heat. When fully cooked, turn off heat.
  4. Drain mixture to remove excess grease.
  5. In large skillet, add soups and sauce to meat. Mix well.
  6. Put half of mixture into a freezer safe container.
  7. Tear 6 tortillas into bite sized pieces.
  8. Layer small casserole dish: tortilla pieces, meat mix, cheese. Repeat.
  9. Bake for 30 minutes.
  10. Put extra mixture, unused tortillas, and unused cheese in the freezer for the next time you want to make this meal!
